# How to Make It:
01 - Preheat oven to 350°F (175°C) and line a large baking sheet with parchment paper.
02 - In a large bowl, whisk together all-purpose flour, granulated sugar, baking powder, and fine sea salt.
03 - In a separate bowl, beat the eggs with vanilla extract, almond extract, and vegetable oil until smooth.
04 - Add the wet mixture to the dry ingredients and mix gently until just combined without overmixing.
05 - Fold in the lightly toasted sliced almonds and, if desired, mini chocolate chips.
06 - Divide the dough in half; shape each half into a log approximately 10 inches long and 2 inches wide on the prepared baking sheet, flattening slightly.
07 - Bake for 18 to 20 minutes until just set and lightly golden, then remove and cool for 10 minutes.
08 - Lower the oven temperature to 300°F (150°C).
09 - Using a sharp serrated knife, slice each log diagonally into ¾-inch thick pieces.
10 - Arrange sliced pieces cut side up on the baking sheet; bake for 5 minutes, flip each piece, then bake an additional 5 minutes for a soft texture.
