- Lamb: 8 small lamb loin or rib chops about 1 inch thick, 2 tablespoons olive oil, 1 teaspoon kosher salt, ½ teaspoon freshly ground black pepper, 2 cloves garlic minced, 1 tablespoon fresh rosemary finely chopped or 1 teaspoon dried
- Mint Sauce: 1 cup fresh mint leaves coarsely chopped, ¼ cup fresh flat-leaf parsley chopped, 1 small shallot minced, 2 tablespoons red wine vinegar, 2 teaspoons honey, ⅓ cup extra virgin olive oil, Salt and pepper to taste
Instructions

- Pat the lamb chops dry with paper towels. Rub both sides with olive oil, salt, pepper, minced garlic, and chopped rosemary.
- Step 2:
- Heat a large skillet preferably cast iron over medium-high heat until hot.
- Step 3:
- Add the lamb chops in a single layer work in batches if needed. Sear for 3 4 minutes per side for medium-rare or until desired doneness. Transfer to a plate cover loosely with foil and rest for 5 minutes.
- Step 4:
- Meanwhile make the mint sauce In a bowl combine mint, parsley, shallot, red wine vinegar, and honey. Drizzle in olive oil while stirring. Season with salt and pepper to taste.
- Step 5:
- Serve lamb chops warm drizzled with rustic mint sauce. Garnish with extra mint if desired.
